Wenn der Spargel etwas abgekühlt ist, kann man ihn in etwa 1 cm schräge Scheiben schneiden. In den Spargelfond die Schalen geben und ziehen lassen.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Für das Risotto</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-12498-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die Schalotte in feine Würfel schneiden und im Topf mit Olivenöl bei halber Hitze langsam anschwitzen. Etwas Salz dazu geben, da sie dadurch schneller weich werden. Als nächstes kommt der Risotto-Reis dazu. Diesen ebenfalls kurz mit anschwitzen.</span></div></li><li id="wprm-recipe-12498-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Das Lorbeerblatt kann man ebenfalls in den Topf geben. Mit dem Weißwein ablöschen und diesen verkochen lassen, damit er seine Säure verliert. Danach mit einem Teil von dem Spargelfond angießen. Unter rühren bei wenig Hitze langsam einkochen lassen. Wenn dieser verdunstet ist, nochmals mit Spargelfond angießen. Diesen Vorgang wiederholen, bis der Reis gar ist (probieren). Danach mit Salz und Pfeffer abschmecken.</span></div></li><li id="wprm-recipe-12498-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Nun kommt die Butter und der geriebene Grana Padano zum Risotto. Sobald die Windbeutel im Ofen sind empfehle ich für ein besseres Backergebnis, eine halbe Tasse mit Wasser unten in den Backofen zu schütten. Während dessen die ganze Zeit rühren, damit die Béchamelsoße nicht anbrennt.
